Description

The 2012 Château Chalon from Domaine Berthet Bondet is a prestigious dry white wine, produced in the iconic Château-Chalon region at the heart of Jura. Made exclusively from the Savagnin grape, grown on the steep slopes of this appellation, it benefits from aging under voile (a unique regional technique), which imparts aromatic complexity and remarkable aging potential.

Blend

This Château Chalon is made from 100% Savagnin. After manual harvesting, the wine is aged under voile (a layer of yeast) for six years and three months in oak barrels without any topping off (ouillage). This technique allows for the development of oxidative aromas and complex notes while preserving great freshness.

Color: The wine displays a bright golden color with amber reflections. Its intense hue reflects the extended aging under voile and the careful craftsmanship involved in its production.

Nose: The nose is intense and complex, revealing characteristic aromas of walnuts, toasted hazelnuts, and spices such as curry. There are also notes of dried fruits, almonds, green apple, and quince, enriched by floral and mineral nuances that add depth to the bouquet.
