Description

The 2010 Château Chalon from Domaine Berthet Bondet is an exceptional dry white wine, originating from the renowned Château-Chalon appellation, famous for its vin jaune. This unique wine is made exclusively from the Savagnin grape, typical of the Jura region, and is aged using the traditional “sous voile” method. This process involves aging the wine in barrels without topping up to compensate for evaporation, which allows a layer of yeast (veil) to form on the wine’s surface, giving it distinct aromas and remarkable longevity.

Blend

This wine is 100% Savagnin, a late-ripening and hardy grape perfectly suited for the “sous voile” aging method. After a classic fermentation, the wine is aged in barrels for six years and three months without intervention, allowing the yeast veil to develop. This method imparts the oxidative and complex aromas typical of Château-Chalon wines.
