The 2016 Château Chalon from Domaine Berthet Bondet is an exceptional vin jaune, produced in the prestigious Château-Chalon appellation at the heart of the Jura region. Made exclusively from the Savagnin grape, this wine undergoes a unique aging process under a veil of yeast for over six years. This aging method, known as “sous voile,” without topping up the barrels, creates an impressive aromatic complexity and grants the wine an extremely long aging potential, often compared to the finest wines for long-term cellaring worldwide.

This Château Chalon is made from 100% Savagnin, a grape variety perfectly suited to the Jura terroir and oxidative aging under a veil. The wine is aged in oak barrels for at least six years and three months, with no topping up to replenish natural evaporation, allowing the development of a yeast veil that protects the wine from excessive oxidation. This extended aging period gives rise to the unique characteristics of vin jaune wines.
